Shallow-fried pancakes of grated potato with onion and seasoning. Easy, fast and incredibly delicious!
The potato pancakes were already fried in Cieszyn Silesia before the Second World War. The literature, however, shows that they were fried even earlier, because already around the turn of the 19th and 20th century in Cieszyn Silesia, on the territory of the Beskidy. Potato pancakes often replaced bread. The best ones are those that are fired on cast-iron trays.
Ingredients:
- 2 kg of potatoes
- 2 eggs
- 4-6 tablespoons of flour
- 2 onions
- 2 garlic cloves
- salt and pepper to taste
- 500g/17.5 oz of bacon or 2 cups sour cream
Preparation:
1. Grind or grate potatoes. Then add onions and garlic to the bowl and mix it.
2. Add eggs, and flour and season to taste. Mix again.
3. Cut the bacon into small cubes and let it melt over low heat so that the fat melts and the bacon becomes slightly brown.
4. On the heated baking tray with a spoon spread the pancakes. Remember, they should be flat.
5. Fry until golden brown.
Fried potato pancakes serve with crackling or, if you like, sour cream.
