    Creamy Polish Cheesecake Recipe

    Polish cheesecake, known as “sernik,” is a delightful dessert cherished for its rich and creamy texture. This traditional recipe has been passed down through generations, and its preparation involves a few key steps that result in a mouthwatering cheesecake.

    Ingredients:

    • 250g of soft butter
    • 6 eggs, separated into yolks and whites
    • 1 cup of powdered sugar
    • 500g of ground cheese (farmers’ cheese or curd cheese work well)
    • 1 teaspoon of vanilla sugar
    • 200ml of heavy cream
    • 2 tablespoons of potato starch
    • Butter or breadcrumbs for greasing the pan
    • Powdered sugar or chocolate glaze for topping

    Instructions:

    1. Start by preheating your oven to 170°C (338°F). Grease a 26cm (about 10 inches) round cake tin with butter and dust it with breadcrumbs or ground almonds. Alternatively, you can line the bottom with parchment paper.
    2. In a mixing bowl, beat the soft butter until it becomes fluffy and pale in color.
    3. Gradually add the egg yolks one by one, alternating with spoonfuls of powdered sugar. Continue to beat the mixture thoroughly until it’s well combined.
    4. Reduce the mixer speed to medium and introduce the ground cheese to the mixture. Blend until it’s fully incorporated.
    5. Add the vanilla sugar and then pour in the heavy cream while continuing to mix.
    6. Gradually add the potato starch while still mixing, ensuring that all ingredients are evenly combined.
    7. In a separate clean bowl, whip the egg whites until they form stiff peaks.
    8. Gently fold the whipped egg whites into the cheesecake mixture. Be gentle to maintain the airiness.
    9. Pour the cheesecake mixture into your prepared cake tin and place it in the preheated oven.
      Bake for approximately 60 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.
    10. Allow the cheesecake to cool gradually by opening the oven door slightly for a few minutes. Then, carefully remove it from the oven.
    11. Once the cheesecake has cooled completely, dust the top with powdered sugar or drizzle it with your favorite chocolate glaze.
