Ingredients:
- 2 pork trotters
- 1 pork shank
- 7.5 cups water
- 2 large carrots
- 1 parsley root
- 1 celery root
- garlic, bay leaves, allspice berries, salt, pepper
Instructions:
Preparing the Meat:
- Thoroughly clean and wash the pork trotters, and shank, and cut the trotters into smaller pieces.
- Place the meat in a pot, cover with cold water, and bring to a boil. Once boiling, discard the water, rinse the meat under running water to remove any scum.
Cooking:
- Place the meat back in the pot and add 7.5 of fresh water. Add the carrots, parsley root, celery root, garlic (unpeeled cloves), bay leaves, allspice berries, salt, and pepper.
- Simmer on low heat for about 3-4 hours until the meat is very tender and easily separates from the bone. Skim off any foam during cooking.
Preparing the jelly:
- Remove the cooked meat from the pot. You can reserve the carrots and other vegetables for decoration.
- Separate the meat from the bones and cut or chop it into small pieces.
- Strain the broth through a sieve to make it clear.
Assembling the Dish:
- Arrange the meat and, optionally, sliced carrots in small bowls or one large dish.
- Pour the strained broth over the meat to cover all ingredients.
- Allow to cool, then refrigerate for several hours until the jelly is well set.
Serving:
Before serving, you can sprinkle the jelly with lemon juice or vinegar. It pairs wonderfully with bread.
