Polish cheesecake, known as “sernik,” is a delightful dessert cherished for its rich and creamy texture. This traditional recipe has been passed down through generations, and its preparation involves a few key steps that result in a mouthwatering cheesecake.
Ingredients:
- 250g of soft butter
- 6 eggs, separated into yolks and whites
- 1 cup of powdered sugar
- 500g of ground cheese (farmers’ cheese or curd cheese work well)
- 1 teaspoon of vanilla sugar
- 200ml of heavy cream
- 2 tablespoons of potato starch
- Butter or breadcrumbs for greasing the pan
- Powdered sugar or chocolate glaze for topping
Instructions:
- Start by preheating your oven to 170°C (338°F). Grease a 26cm (about 10 inches) round cake tin with butter and dust it with breadcrumbs or ground almonds. Alternatively, you can line the bottom with parchment paper.
- In a mixing bowl, beat the soft butter until it becomes fluffy and pale in color.
- Gradually add the egg yolks one by one, alternating with spoonfuls of powdered sugar. Continue to beat the mixture thoroughly until it’s well combined.
- Reduce the mixer speed to medium and introduce the ground cheese to the mixture. Blend until it’s fully incorporated.
- Add the vanilla sugar and then pour in the heavy cream while continuing to mix.
- Gradually add the potato starch while still mixing, ensuring that all ingredients are evenly combined.
- In a separate clean bowl, whip the egg whites until they form stiff peaks.
- Gently fold the whipped egg whites into the cheesecake mixture. Be gentle to maintain the airiness.
- Pour the cheesecake mixture into your prepared cake tin and place it in the preheated oven.
Bake for approximately 60 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean. - Allow the cheesecake to cool gradually by opening the oven door slightly for a few minutes. Then, carefully remove it from the oven.
- Once the cheesecake has cooled completely, dust the top with powdered sugar or drizzle it with your favorite chocolate glaze.
