Bajaderki, a fantastic dessert concoction, ingeniously utilizes a medley of assorted cakes, even including leftover bits. This recipe is perfect for post-holiday gatherings and larger events.
Ingredients
- 800-900g of crumbled tea biscuits, cookies, sponge cakes, muffins, etc. (without creamy fillings, gelatin, fruits; nuts are permissible)
- ½ cup milk
- ½ cup sugar (omit if cakes are already sweet)
- 1 jar of thick jam, marmalade, or plum butter (about 350 – 400g)
- 125g butter
- Rum or rum extract to taste
- 4 tbsp nut or chocolate spread (e.g., Nutella or peanut butter)
- 3-4 tbsp cocoa powder
- For coating: chocolate glaze (200g dark chocolate melted with 125g butter)
- Optional: chopped nuts, coconut flakes, or chocolate sprinkles
Preparation Steps
- Crumble biscuits and cakes finely by hand, in a grinder, or blender. Place crumbs in a bowl.
- Heat milk, sugar, butter, and cocoa until dissolved. Cool slightly and mix with crumbs, jam, nut/chocolate spread, rum, or extract.
- Knead into a uniform mixture. Shape into balls and chill for an hour.
- Dip chilled balls in warm chocolate glaze, then coat with nuts, coconut, or sprinkles.
- Allow to set at room temperature. Serve with black coffee or tea.
