    Polish vegetable salad with mayonnaise recipe

    Vegetable salad with mayonnaise is a really popular dish in Poland. Moreover, it finds its place on the Christmas table.

    Although the recipe differs across Poland, the main ingredients remains the same. Usually, the recipe is passed down from generation to generation, for example, a person from Silesian Voivodeship will not add an apple to the salad. But the situation changes in Greater Poland Voivodeship.

    What is interesting, the foundation of the salad is mayonnaise. It could be said that when it comes to the mayo, Poles distinguish two most popular brands:

    We recommend trying both and then deciding which one will be better for the vegetable salad. Some say that Kielecki Mayonnaise includes too much vinegar and is a bit sourer than Winiary Decorative Mayonnaise. On the other hand, Winiary Decorative Mayonnaise may be too sweet for you.

    In conclusion, choose your favourite mayo and then follow the recipe below.


    Remember that you can change the amount of vegetables. The best option is to keep consistency. What does it mean? It is really simple, if you add a cup of potatoes, add a cup of carrots too. The values should match.

    • 5 medium potatoes
    • 5 carrots
    • 5 eggs
    • 2 sticks of celery
    • 2 parsley roots
    • 5 pickles
    • 2 onions
    • a can of peas
    • a jar of mayo
    • salt & pepper


    • Boil potatoes, carrots, celery and parsley roots in salted water until tender.
    • Hard boil eggs.
    • Dice up all vegetables into small pieces and put in a bowl. It is better to chop the eggs at the very end.
    • In a large mixing bowl combine all ingredients, add peas and seasoning.
    • Then, add mayo and gently mix until combined. If you feel that the salad seems to be too dry, add more mayo.
    • Keep in the fridge.
