Treats from Poland: Zygmuntówka

Zygmuntówka: A once-celebrated pastry symbolizing Warsaw, now a rare treat despite its royal inspiration and initial popularity.

In 2009, Warsaw sought to create a new culinary symbol through a competition organized by the City Promotion Office and the Guild of Food Crafts. The goal was to design a unique pastry that would represent the city. Out of 18 competing bakeries, pastry chef Witold Teledziński’s creation, Zygmuntówka, emerged victorious.

What Makes Zygmuntówka Special

Zygmuntówka is shaped like a tall crown, paying homage to King Sigismund III Vasa. The almond-based pastry is filled with chocolate mousse, cranberry preserves, whipped cream, and topped with a crown-like meringue. The name “Zygmuntówka” was chosen through an online poll, proposed by Warsaw native Witold Żyła.

A Brief Moment of Fame

While initially popular, Zygmuntówka’s fame quickly faded, making it a rare treat today. Despite its intended status as a symbol of Warsaw, it has become difficult to find.
