    Polish traditional delicacy – racuchy [RECIPE]

    Quick to make and delicious. Apple racuchy are a delicious snack for children and adults alike.

    Racuchy dish is a traditional Polish delicacy similar to crumpets or American pancakes. Racuchy are made from flour, milk, eggs, sugar and a pinch of salt. Racuchy are made with yeast or, in other versions, baking powder or baking soda. In Poland, racuchy are usually eaten for dinner, snack or supper.

     

     

    INGREDIENTS

     

    • 2 apples
    • 7 fl oz/ 200 ml milk 
    • 1 egg
    • 6 oz/ 150 g wheat flour
    • 1 tbsp vanilla sugar
    • 1 teaspoon sugar
    • 1/2 teaspoon baking soda
    • for frying: e.g., clarified butter, coconut oil or other vegetable oil

     

    PREPARATION

     

    1. Sift the flour into a bowl.
    2. Add the vanilla sugar, sugar and baking soda, and mix it.
    3. Add milk and egg and mix with a whisk until smooth.
    4. Peel the apples, cut into quarters or slice them. 
    5. Add to the dough and mix.
    6. Put about a spoonful of mixture and 3 apple slices per racuch onto the hot fat in the frying pan and fry for about 1.5 minutes until golden brown.
    7. Flip on the other side and repeat the frying.
    8. Serve with icing sugar, cherry or strawberry jam or with whatever you want.
