    Amerykany – Classic Polish Sponge Cookies with Icing

    Amerykany, a nostalgic treat from the 90s, are beloved sponge cookies that were especially popular in Poznań, Poland. These fluffy, tender cookies are made with a unique sponge-like dough enriched with butter and milk, then finished with a sweet, tangy lemon glaze.

    The name “Amerykany” evokes fond memories for many, reminding them of simpler times and the joy of enjoying these delightful confections with family and friends. Perfect for any occasion, these cookies are a delicious way to bring a taste of Polish tradition to your home.

    Ingredients:

    • 120 g butter
    • 250 ml milk
    • 2 teaspoons baking ammonia (ammonium carbonate)
    • 3 medium eggs
    • 120 g sugar
    • 2 teaspoons vanilla sugar
    • 500 g all-purpose flour
    • A pinch of salt
    • 300 g powdered sugar
    • 40 ml water
    • 1 tablespoon freshly squeezed lemon juice

    Instructions:

    Prepare the Cookie Dough:

      • Cut the butter into smaller pieces and place in a saucepan.
      • Add milk and baking ammonia to the saucepan.
      • Heat over low heat for about 3 minutes, until the butter is melted. Ensure the mixture does not boil.
      • Let the mixture cool slightly.

      Mix the Ingredients:

        • In a large bowl, beat the eggs with sugar and vanilla sugar until well combined.
        • Add the melted butter mixture to the bowl.
        • Gradually add flour and a pinch of salt, mixing on low speed until the ingredients are just combined. The batter should have the consistency of thick cream.

        Bake the Cookies:

          • Preheat the oven to 180°C (350°F).
          • Line a baking sheet with parchment paper.
          • Drop spoonfuls of the batter onto the prepared baking sheet, leaving enough space between each cookie.
          • Bake in the preheated oven for about 15 minutes, or until the cookies are lightly golden, especially at the bottom.
          • Remove from the oven and let them cool on a wire rack.

          Prepare the Icing:

            • In a bowl, combine powdered sugar, water, and lemon juice.
            • Mix until smooth. Adjust the consistency if necessary by adding more lemon juice or water for a thinner icing, or more powdered sugar for a thicker one.

            Ice the Cookies:

              • Once the cookies are cool, spread the icing on the flat side of each cookie.
              • Allow the icing to set before serving.
