    Poland’s favourite tomato cream soup recipe

    Tomato cream soup is not a traditional Polish dish, but it has become quite popular in Poland in recent years.     Ingredients:

    • 1 tablespoon of olive oil
    • 1 medium onion, diced
    • 2 cloves of garlic, minced
    • 2 cans of diced tomatoes
    • 1 cup of vegetable broth
    • 1 cup of heavy cream
    • Salt and pepper to taste
    • Fresh basil leaves for garnish

    Instructions:

    1. In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic and sauté until the onion is translucent.
    2. Add the cans of diced tomatoes (undrained) and vegetable broth. Stir and bring to a boil.
    3. Reduce the heat and let the soup simmer for about 10 minutes.
    4. Use an immersion blender to blend the soup until it is smooth.
    5. Add the heavy cream and stir until it is well combined.
    6. Season the soup with salt and pepper to taste.
    7. Let the soup simmer for a few more minutes until it is heated through.
    8. Serve the soup in bowls and garnish it with fresh basil leaves, more heavy cream, pasta, or Bruschetta.
